Hello, UNHCR published an operational guidance on the use of special nutritional products to reduce micronutrient deficiencies and malnutrition in refugee populations, and they have an interesting section on acceptability tests. However it may inspire you. From a practical viewpoint, I would suggest that if you complete interviews by direct observations, i.e., to record the child's reaction when he/she tastes the product, try to detail as much as possible how you want this to be done when writing the methodology/protocol, so observations can be as standardised as possible and really useful at the end of the exercise. This of course requires a solid training, coaching and supervision of your data collectors but at least the risk of being frustrated at the end with useless data will strongly decrease.
