You can run the old DOS EpiInfo using DOSBox. It works well but that version of EpiInfo one does the older NCHS anthropometric references. Statistical data-entry packages are not common on the Mac. A number are available ranging from simple flat files to fully relational systems. May will allow data-entry on the iPad. Spreadsheet software can also be used but you need to check hard for data-entry errors. For data-analysis you can use packages like SPSS (or the free clone PSSP for simpler analyses) or STATA. I use R - a steep learning curve (I have a course you can follow ... there are a number of web-bases courses) - and RAnalyticalFlow. I hope this is of some use.
